Ingredients
  

  • 1 cups chickpea flour (besan)
  • 2 large eggs
  • ½ cups water (or more, as needed)
  • ½ teaspoon turmeric powder
  • ½ teaspoon cumin seeds
  • ½ teaspoon red chili powder (optional)
  • ½ teaspoon baking powder
  • ¼ teaspoon salt (or to taste)
  • ¼ cups finely chopped onions
  • ¼ cups finely chopped tomatoes
  • ¼ cups finely chopped bell peppers
  • 2 teaspoon finely chopped fresh cilantro
  • 1 green chili, finely chopped (optional)
  • 2 teaspoon olive oil or vegetable oil (for cooking)

Instructions
 

  • Mix dry ingredients:
    In a large mixing bowl, mix chickpea flour, turmeric powder, cumin, red chili powder, baking powder, and salt.
  • Add the eggs and water:
    Crack the eggs into the mixing bowl and whisk to combine. Gradually add the water, mixing well. The batter should be pourable but not too thin. Adjust the amount of water as needed.
  • Add vegetables:
    Add chopped onions, tomatoes, bell peppers, coriander leaves, and green chilies to the mixture.
  • Heat the pan:
    Heat oil in a pan, leave the pan to heat for a while, and when hot add the mixture to the pan.
  • Cook until bubbles form:
    The pancake for about 2-3 minutes, or until bubbles form on the surface and the edges begin to rise.
  • Flip and cook on the other side:
    Carefully flip the pancake using a spatula and cook for another 2-3 minutes until golden brown in color.
  • Repeat:
    Finish cooking with a small amount of butter.
  • Serve:
    You serve these hot chickpea flour pancakes with your favorite chutney to the whole family.

Notes

You can add other vegetables like spinach, and carrots for extra nutrition and taste.
