Ingredients
  

  • 1 cups yellow split peas
  • 4 cups water (for cooking the peas)
  • 1 medium onion, finely chopped
  • 2-3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoon niter kibbeh (Ethiopian spiced clarified butter) or regular butter
  • 1 tablespoon turmeric powder
  • Salt to taste
  • Black pepper to taste
  • 1-2 green chilies, sliced
  • 2 tablespoon fresh lemon juice
  • Fresh cilantro or parsley, chopped

Instructions
 

  • Wash and soak:
    Wash the yellow split peas in clean, cold water. Soak the motors in cold water for 1 hour to reduce cooking time.
  • Cook split peas:
    Take 4 cups of water in a pot and strain the soaked peas and add it to the pot of water. Bring to a boil over high heat, then reduce heat and simmer for 30 minutes. Once the motors are well cooked, remove from heat.
  • Saute the aromatics:
    In a large separate pan, heat the oil, add the chopped onion, and saute for about 5 minutes or until it becomes translucent.
  • Add garlic and ginger:
    Add minced garlic and ginger to the pan. and cook for an additional 1-2 minutes until fragrant. 
  • Add Turmeric and Chili: 
    Stir turmeric powder and green chilies well in the pan. Cook for another minute to lightly toast the spices. 
  • Combine the peas and spices: 
    Add the cooked peas to the pan of spices. Stir well to combine. 
  • Simmer and Season: 
    Season with salt and pepper to your taste. Allow the dish to simmer for another 10-15 minutes, allowing the flavors to meld together. If the stew is too thick, you can add as little water as you like.
  • Finish and serve: 
    Removethe dish from the pan and stir in fresh lemon juice if you like. Garnish with chopped cilantro or parsley if desired. 

Notes

 Vegetable Additions: 
You can add other vegetables to this stew such as carrots, potatoes, or spinach for extra nutrition and flavor. 
Spice Adjustment:
Adjust the amount of spices as per your serving. You can add a pinch of cumin or coriander powder for extra flavor.
Serving suggestion:
You can serve this dish with rice and bread.
