- 1 cups yellow split peas
- 4 cups water (for cooking the peas)
- 1 medium onion, finely chopped
- 2-3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 tablespoon niter kibbeh (Ethiopian spiced clarified butter) or regular butter
- 1 tablespoon turmeric powder
- Salt to taste
- Black pepper to taste
- 1-2 green chilies, sliced
- 2 tablespoon fresh lemon juice
- Fresh cilantro or parsley, chopped
Wash and soak:Wash the yellow split peas in clean, cold water. Soak the motors in cold water for 1 hour to reduce cooking time. Cook split peas:Take 4 cups of water in a pot and strain the soaked peas and add it to the pot of water. Bring to a boil over high heat, then reduce heat and simmer for 30 minutes. Once the motors are well cooked, remove from heat. Saute the aromatics:In a large separate pan, heat the oil, add the chopped onion, and saute for about 5 minutes or until it becomes translucent. Add garlic and ginger:Add minced garlic and ginger to the pan. and cook for an additional 1-2 minutes until fragrant. Add Turmeric and Chili: Stir turmeric powder and green chilies well in the pan. Cook for another minute to lightly toast the spices. Combine the peas and spices: Add the cooked peas to the pan of spices. Stir well to combine. Simmer and Season: Season with salt and pepper to your taste. Allow the dish to simmer for another 10-15 minutes, allowing the flavors to meld together. If the stew is too thick, you can add as little water as you like. Finish and serve: Removethe dish from the pan and stir in fresh lemon juice if you like. Garnish with chopped cilantro or parsley if desired.
