Ingredients

  • 2 lbs (900g) chicken wings, separated into flats and drumettes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika (optional for extra flavor)
  • 1 tablespoon grated Parmesan cheese (optional for added crispiness)

For the Caesar Dressing:

  • ¼ cup mayonnaise (preferably made with olive oil or avocado oil)
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 2-3 anchovy fillets, finely chopped (or 1 teaspoon anchovy paste
  • 1 garlic clove, minced
  • Salt and pepper to taste

For Garnish:

  • Extra grated Parmesan cheese
  • Fresh parsley, chopped
  • Lemon wedges

     Preheat your oven or air fryer: Preheat the oven to 400°F(200°C) or your air fryer to 375°F (190°C).
  • Season TheWings:

  • In TheOven:

  • In AirFryer:
    Arrange the wings in a single layer in the air fryer basket(you may need to cook them in batches). Air fry for 20-25 minutes, flipping halfway through, until wings are crisp and cooked through.
  • Mix The Dressing:
    In a small mixing bowl, whisk together the mayonnaise, grated Parmesan cheese, olive oil, lemon juice, Dijon mustard, chopped anchovies (or anchovy paste), and minced garlic. Add salt and pepper to taste. For a richer dressing, whisk in egg yolks if desired.
  • Taste andAdjust:
    Taste the dressing and adjust the seasoning with additional salt, pepper, lemon juice, or anchovies if necessary. Set aside.
  • Coat TheWings:
    When the wings are fully cooked and crisp, transfer them to a large mixing bowl. Add Caesar dressing and toss wings to coat evenly in dressing.

Notes

Crispinis are the Key:
